I have lived in northern Manitoba my entire life! Never have the schools been closed on account of a “Snowday” that we see in the movies. OK…well, we had a power outage and some of the schools lost power- but I declared it a Snowday because of the HUGE dump of snow and snowstorm we recieved in these parts of Canada. Fall came and went super quick!
After five hours, power came back on! So me and the Tiny chef got to work!
I made a huge pot of chicken soup yesterday, so I strained some broth and started to work on some homeade Tomato soup.

My husband’s mom passed away when my oldest was only fourteen months old. I remember her saying “The Best comfort food ever when you’re sick is grilled cheese and tomato soup!” I never really ate that combo growing up, and sometimes her words come to mind on days like today where we are all with the snifflies and inside on a blustery day. I like to tell myself that if I share these little snippets of who she was and what she used to say, it’s like she gets to still be in my kids’ life kinda thing. I hate that they don’t get a life with their grandma. So this special meal was for her. As we whisked and poured we talked about their Baba (Ukrainian for grandma) Kim.
I subbed vegan cheese for cheese, but feel free to take whatever option you’d like!
And yes. It’s October 4 and we are in the middle of a windstorm. #OhCanada

- 5 cups Bone Broth Or you could use your favourite veggie/beef/fish stock
- 1/2 cup organic coconut milk I use the creamy part from the can
- 4 tbsp organic tomato paste
- 1/4 cup pureed white onion
- 1 clove garlic pureed with onion
- 1 tsp ground sea salt
- 1 tbsp organic garlic salt
- 1 tsp ground black pepper
- 1 tbsp smoked paprika
- 2 slices Gluten free bread (I use Glutino's Seeded)
- 1 tbsp Butter or spread of your choice (I use Earth Balance dairy and soy free spread)
- 1/4 cup shredded cheese (I use Daiya- you could use goat or any kind you'd like!)

- Warm up your stock to a simmer. Add the onion and garlic puree and wisk!
- Add the Coconut milk
- Add the tomato paste.
- Whisk everything together and let simmer.
- Take two slices of bread and butter them both sides. Layer or sprinkle with your fave cheese and cover with slice of bread. Pan fry both sides until browned.
