Ingredients
- 2 tbsp olive oil
- 1 onion chopped
- 1/2 cup celery
- 2 cup medium Granny Smith apples, peeled and chopped
- 4-6 cloves garlic, peeled and finely minced
- 1 tbsp Thyme fresh or dried
- 1 tbsp sage fresh or dried
- 1 tbsp Rosemary fresh or dried
- 1 tsp course sea salt
- 1 tsp ground black pepper
- 1/2 cup Dry white wine
- 4 cups turkey broth
- 2 cup cooked wild rice
- 1 cup cooked mixed quinoa
- 1 1/2 cup dried cranberries
- 1 cup chopped pecans

Instructions
- Cook the wild rice and quinoa seperately, and put aside.
- Combine onions, garlic, pecans and spices and pan fry in the olive oil.
- Add the Granny Smith apples and th cranberries to the pan.
- Slowly add the white wine, and then the turkey broth to the mixture,
- Let cook until everything is tender and the liquid is simmered out.
- Serve with fresh parsley!
